Honey Walnut Shrimp

- 1 pound large shrimp, peeled and deveined
- 1/2 cup walnuts
- 1/2 cup mayonnaise
- 1/4 cup honey
- 1 tablespoon sweetened condensed milk
- 1 teaspoon lemon juice
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
- Chopped green onions for garnish
Directions
. Prepare the Walnuts:
- In a small saucepan, bring water to a boil and add the walnuts. Boil for about 2-3 minutes, then drain and rinse under cold water.
- In the same saucepan, add 1/2 cup sugar and 1/2 cup water. Bring to a simmer, then add the walnuts. Cook for about 5 minutes until the syrup thickens and coats the walnuts. Remove and let cool on parchment paper.
2. Prepare the Sauce:
- In a bowl, mix together mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth. Set aside.
3. Coat the Shrimp:
- In a mixing bowl, combine cornstarch, salt, and pepper. Dredge the shrimp in the cornstarch mixture until evenly coated.
4. Fry the Shrimp:
- Heat vegetable oil in a deep skillet or frying pan over medium-high heat. Once hot, carefully add the shrimp in batches, frying for about 2-3 minutes on each side until golden and crispy. Remove and drain on paper towels.
5. Combine and Serve:
- In a large bowl, gently toss the fried shrimp with the prepared sauce until well coated. Add the candied walnuts and mix gently.
- Garnish with chopped green onions before serving.
