Sticky Vietnamese Pork

1 brown onion, finely diced
1 large carrot, finely diced
1 medium zucchini, diced
2 cloves garlic, crushed
1 stalk of lemongrass, white part only, finely sliced
2 tbs grated ginger
½ a long red chilli, sliced (optional)
500g pork mince
2 tbs fish sauce
4 tbs brown sugar
1 tbs soy sauce
Zest of 1 lime, finely grated
1 tsp sesame oil
Juice of 1 lime
3 spring onion, finely sliced
Coriander, to serve
Rice, to serve
Directions
Heat a wok over medium heat and add a drizzle of oil, along with the onion, carrot and zucchini. Saute for 3-4 minutes then add the garlic, lemongrass, ginger and chilli and cook for a further 1-2 minutes.
Add the pork mince and cook, stirring, to break up any lumps, until browned. Add the fish sauce, brown sugar and soy sauce and stir to coat. Allow to cook for 3-4 minutes without stirring then stir a few times and allow to simmer and cook for a further 2-3 minutes. Stir again and, if needed, continue this process until the pork is nicely caramelised & sticky.
Add the sesame oil & lime zest & stir to combine. Squeeze over the juice of a lime & sprinkle with spring onion, coriander leaves & extra chilli.
Serve with rice or noodles & steamed greens.
