Tomato Basil Chicken Pasta

Yields: 4 to 6 servings
Ingredients:
– 2 lbs chicken breasts (about 3 large)
– Tony’s seasoning, to taste
– 1–2 tablespoons real butter
– 26–28 oz chopped or diced tomatoes (Pomi recommended)
– ½ pint (8 oz) fresh cherry or grape tomatoes
– 1 package (2/3 oz) basil
– 1 tablespoon olive oil
– 1 sweet onion
– 8 cloves garlic (adjust to taste)
– 8–10 oz thin spaghetti, cooked al dente
Directions
Instructions:
1. Chop the onion and mince the garlic. Slice cherry tomatoes in half and rough chop the basil.
2. In a large pan, heat olive oil over medium heat. Add chopped onions and garlic. Sauté until fragrant and translucent.
3. Add the chopped tomatoes to the pan. Cook over low-medium heat, stirring occasionally.
4. In a separate pan, heat 1 tablespoon butter over medium heat. Season chicken breasts generously with Tony’s seasoning.
5. Once butter is hot, add chicken to the pan. Sear on one side until crust forms and halfway cooked through. Flip and continue cooking until done. Add more butter if needed.
6. When chicken is nearly done, add cherry tomatoes to the sauce. Stir until combined and cook until soft.
7. Add chopped basil and stir to combine. Remove sauce from heat and mix in cooked spaghetti.
8. Slice cooked chicken breasts and serve on top of the pasta.
