Mini Egg Chocolate Cornflake Banana Bread

Ingredients

2 over ripe bananas, mashed

100g butter

100g caster sugar

125g self raising flour

1 ½ eggs

1 tsp vanilla essence

2 ½ bag of mini eggs

2 bars of Cadbury chocolate

75g cornflakes

Cream together the butter & sugar until fluffy

Directions

Add in the eggs & vanilla

Mix in the mashed banana

Fold the flour in, once mix is combined add in 1.25 bags of crushed mini eggs.

Bake in a loaf tin, on 160 degrees for 35 minutes. Or until a skewer comes out clean.

Let the banana bread cool in the tin.

Melt the chocolate and add in the remainder of the 2nd bag of mini eggs along with the cornflakes, mix until combined.

Layer this on top of the banana bread, then top with more mini eggs.

Many mini eggs needed for this recipe but it’s worth it 🤣
