Cheesy Taco Bake

Ingredients

Ingredients for 4:

600g potatoes

1 tbsp paprika

1 tbsp olive oil

500g lean beef mince

400g passata

1 packet of taco seasoning

1 red & yellow pepper

1 onion

80g low fat cheese

4 tbsp sour cream

Fresh coriander

Directions

Preheat oven to 180 degrees C (fan)

Dice the potatoes, season with paprika, salt and pepper. Bake for 30 minutes.

Meanwhile, fry the onion until soft then add in the beef mince and fry until cooked through.

Add in the taco seasoning, peppers and passata. Simmer over a low heat.

Take the potatoes out and top with the beef mince. Add cheese and bake for a further 10 minutes until golden and crispy.

Top with sour cream and coriander.

This would be a great meal prep recipe and will keep in the fridge for up to 3 days!
