Buttermilk Biscuits

Ingredients

2 cups all-purpose flour

4 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup (1 stick) cold unsalted butter, cubed

1 1/4 cup buttermilk

1 egg, whisked with 2 Tbsp water or milk

Directions

Preheat your oven to 325°F (220°C).

In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Pour in the buttermilk and stir until just combined. Be careful not to overmix.

Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together.

Roll out the dough to about 1/2 inch thickness. Then fold into layers 5/6 times. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper. Brush with egg wash

Bake for 18-22 minutes, or until the biscuits are golden brown on top. Remove and baste with melted butter.
