1/2 cup Rye flour
1/4 tsp kosher salt
2 egg
1 Tbsp maple syrup
1/2 cup whole milk
1/4 tsp vanilla extract
1 Tbsp butter, Melted
Directions
Whisk together flour, salt, eggs, maple syrup, milk, and melted butter until smooth. Heat a 8" pan and add a bit of oil or butter to coat.
Place 1/4 cup of batter in the pan and swirl to evenly spread it out. Cook for 30-45 seconds and then flip and cook the other side for about 15 seconds. Stack completed crepes on a plate covered with a towel or in the oven set at the lowest temperature.
