Easy Marry Me Chickpeas

Ingredients

1 tablespoon olive oil

3 cloves garlic (minced)

½ small white or yellow onion (diced)

¼ teaspoon red pepper flakes (add more as desired)

1 15-ounce can or 1 ½ cups cooked chickpeas, drained & rinsed

½ cup sun-dried tomatoes (chopped)

1 teaspoon Italian seasoning

½ teaspoon smoked paprika

1 cup coconut milk or cashew cream

3/4 cup vegetable broth

2 tablespoons nutritional yeast

1 tablespoon lemon juice

¼ cup fresh basil (chopped)

¼ teaspoon sea salt (plus more to taste)

¼ teaspoon ground black pepper (plus more to taste)

Directions

Heat olive oil in a large skillet over medium heat. Add garlic, onion, and red pepper flakes. Sauté for 2 minutes until fragrant. Stir in chickpeas, sun-dried tomatoes, Italian seasoning, and smoked paprika. Cook for another 2 minutes.

Pour in coconut milk and vegetable broth. Stir in nutritional yeast. Simmer for 10 minutes, stirring occasionally, until the sauce thickens.

Stir in lemon juice, fresh basil, salt, and pepper. Add more salt and pepper to taste.

Serve over pasta, rice, or with crusty bread.
