Southern Chicken & Gravy

1½ lbs boneless skinless chicken breasts or thighs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon cayenne pepper (adjust to taste)
Salt & pepper to taste
2 tablespoons butter
1 onion, chopped
2 garlic cloves, minced
3 tablespoons all‑purpose flour
2 cups chicken broth
1 cup heavy cream (or milk)
Cooked white rice or mashed potatoes for serving
Chopped green onions for garnish
Directions
Season chicken with garlic powder, paprika, cayenne, salt & pepper. In a skillet, heat oil over medium-high heat. Brown chicken ~3‑4 min per side. Remove chicken and set aside.
In same skillet, add butter then onion & garlic; sauté ~3‑4 min until soft.
Sprinkle flour, stir for ~1 minute to form roux.
Gradually whisk in chicken broth, then cream; bring to a simmer until thickened ~4‑5 min.
Return chicken to skillet, cover and cook ~10‑12 min until chicken reaches 165°F.
Serve chicken smothered in gravy over rice or mashed potatoes. Garnish with green onions.
