Crockpot Sausage, Green Beans and Potatoes

12 oz turkey sausage (or chicken sausage), sliced into rounds
3 cups baby potatoes (or red potatoes), halved or quartered
2 cups green beans, trimmed
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Optional garnish: Fresh parsley, chopped
Directions
Prep the IngredientsSlice the sausage into rounds. Wash and cut the potatoes into bite-sized pieces. Trim the green beans.
Cook the SausageHeat the olive oil in a large skillet or Dutch oven over medium heat.Add the sausage slices and cook for 3-5 minutes until browned. Remove from the skillet and set aside.
Sauté the VegetablesIn the same skillet, add the diced onion and garlic. Cook for 2-3 minutes until fragrant.Add the potatoes and season with smoked paprika, garlic powder, onion powder, salt, and pepper. Stir to coat evenly.
Simmer the DishAdd 1/4 cup water or low-sodium chicken broth to the skillet. Cover and let the potatoes cook for 8-10 minutes, stirring occasionally, until they begin to soften.Add the green beans and cooked sausage back into the skillet. Cover and cook for an additional 5-7 minutes, or until the green beans are tender and the potatoes are fully cooked.
ServeRemove the skillet from heat and garnish with fresh parsley if desired.
