QUICK AND EASY PEANUT CHICKEN SATAY

Ingredients

4 boneless, skinless chicken thigh fillets (cut into 1-inch cubes)

1 tbsp red curry paste

8 oz 8 oz coconut milk

2 tbsp pure peanut butter

2 tbsp soy sauce

1 tsp coconut (palm) sugar

1 splash of cider vinegar

1 tbsp olive oil (or any other vegetable oil)

Directions

Heat a pan with the oil and the curry paste. Stir constantly for a minute.

Add the chicken and cook on high heat for about 10 minutes.

Add the coconut milk, peanut butter, soy sauce, coconut sugar, and cider vinegar.

Stir well and cook for 5 more minutes.
