Parmesan Crusted Asparagus

Ingredients

What you’ll need:

Asparagus (about 30 spears), trimmed at the bottom

¾ cup flour

2 eggs, beaten

1 cup panko crumbs

½ cup parmesan, grated

1 teaspoon salt

Cooking oil spray

Dip:

4 teaspoon mayonnaise

1 teaspoon Dijon mustard

Directions

Preheat the oven at 390 F (200 C).

Mix the panko crumbs with the parmesan and salt in a flat bowl. Then place the flour in a separate bowl.

Dip the asparagus spears in flour, eggs and then cover in panko mixture.

Place parchment paper on a sheet pan, spray with oil and place the breaded asparagus. Keep them relatively spaced out. Spray a little more oil on top and bake for 20-25 minutes or until crispy.
