Air Fryer Carbonara Crumpets

These are my french toast crumpets (frumpets) with a twist.

Inspired by the flavours of the Italian dish, the crumpets are soaked in egg mixed with pecorino (or parmesan) & lots of black pepper, then topped with pancetta and air fried until crispy 🤤.

Directions

Whisk 1 large egg then mix with 20g finely grated pecorino/parmesan cheese and plenty of freshly ground black pepper.

Soak 2 crumpets on each side in the egg mixture & give them a good stir to make sure they are evenly coated.

Place the crumpets in your air fryer basket, then scatter 20g diced pancetta (or thick cut bacon) over the top and around the crumpets.

Air fry at 180C for 8-10 mins, flipping the crumpets halfway so they cook evenly.

Serve, scattering the pancetta over the top of the crumpets. Grate over some additional pecorino/parmesan and add more black pepper if desired. Enjoy!
