Cheesy Potato and Smoked Sausage Casserole

Ingredients

1 lb smoked sausage, sliced into rounds

3 cups diced potatoes (peeled or unpeeled)

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

1 cup sour cream

2 cups shredded cheddar cheese

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped parsley (optional garnish)

Instructions

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

In a skillet, sauté smoked sausage until lightly browned. Remove and set aside.

In the same skillet, melt butter and cook onion and garlic until softened. Stir in flour and cook for 1 minute.

Slowly whisk in milk, cooking until thickened. Stir in sour cream, paprika, salt, and pepper.

Add 1 1/2 cups cheddar cheese to the sauce and stir until melted.

In the baking dish, combine potatoes, browned sausage, and cheese sauce. Mix well.

Sprinkle remaining cheddar cheese on top.

Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15 minutes until potatoes are tender and cheese is golden.

Garnish with parsley before serving.
