Honey Butter Chicken Biscuit

For the Chicken:
2 boneless chicken thighs or breasts (cut into biscuit-sized pieces)
½ cup buttermilk or milk
1 cup all-purpose flour
1 tsp paprika
½ tsp garlic powder
½ tsp cayenne pepper
½ tsp onion powder
Salt & pepper to taste
Oil for frying (vegetable or canola)
Store bought biscuits
For the Honey Butter:
¼ cup unsalted butter, melted
3-4 tbsp honey (adjust sweetness to taste)
Pinch of salt
2-3 pinch of Cajun seasoning
2 pinch black pepper
Directions
bake the biscuits according to the packet instructions.
Soak chicken in buttermilk with a pinch of salt for at least 30 mins (or overnight for best flavor/tenderness).
Mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper in a bowl.
Dredge marinated chicken in seasoned flour and fry in hot oil (350°F) until golden brown and cooked through (about 4–6 minutes per side).
Combine melted butter, honey, and a pinch of salt, 2 pinch of black pepper and cajun seasoning Stir until smooth.
Split warm biscuits, layer with hot fried chicken, and drizzle generously with honey butter.
Serve immediately (and thank yourself later).
