Balsamic-Basil Peach & Burrata Salad

Salad:
2 peaches, cut into wedges, 200 g
2 medium tomatoes, cut into wedges, 200 g
1/2 red onion, thinly sliced, 50 g
1/2 cucumber, cut into thin half-moons, 150 g
200 g burrata cheese
2-3 slices of prosciutto, 60 g
mixed leaves, 80 g
Dressing:
1 tsp olive oil, 10 g
2 tbsp balsamic vinegar, 30 g
1 tsp minced garlic, 3 g
2 tbsp minced fresh basil, 5 g
1/4 tsp salt
Toppings:
Salt
Pepper
1 tbsp (hot) liquid honey/maple syrup, 20 g
Crusty bread (optional)
Directions
Make the dressing: add the olive oil, balsamic vinegar, minced garlic, and salt to a small jar. Shake to combine. Set aside.
Arrange mixed leaves, peach wedges, tomato wedges and cucumber half-moons on a large plate.
Place burrata in the centre and lay prosciutto slices around it.
Drizzle dressing (and hot/liquid honey) over the entire salad.
Top with fresh basil leaves, salt and pepper. Serve immediately.
