One Pot Sausage Cheese Pasta

1-1.5lbs of smoked sausage (ya know the ones that come in the loop shape) or smoked brats would work too.
1 white onion, diced
A bit of olive oil
Minced garlic
2.5 cups chicken broth
1/2 cup heavy whipping cream
1 can fire roasted diced tomatoes (don’t drain)
Seasonings of choice (I loaded it up with Dan-Os, pepper, cayenne, idk just don’t use too little!)
12-16 ounces of pasta (I like bow tie)
2.5 cups shredded cheese (cheddar, pepper jack, use what you like. Remember hand shredded is best!)
Directions
Dice your onion, and chop the sausage into fun angled shapes. No need to cut it small!
Preheat a large pot (ideally not non stick, so you can deglaze the bits from the sausage), and put a little olive oil in the bottom. Let that warm up a bit
Put the onion in, and cook for about 5 minutes on medium heat. Then add the chopped sausage and saute the sausage until it has some color, and the onion is cooked
Add some minced garlic, and cook for another minute.
Now add the chicken broth, whipping cream, and tomatoes. Stir til combined, then season, and stir again until combined
Add the pasta, and simmer covered for 20 minutes. Stir every 5 minutes. When pasta done, add the cheese and still until combined and melty.
