Homemade Chorizo

Ingredients

1 lb ground pork

6 tsp paprika (not smoked)

2 tsp salt

1 tsp black pepper

1 tsp ancho chili powder

1 tsp New Mexico ground chili powder

1 tsp onion powder

1 tsp garlic powder

½ tsp ground cinnamon

¼ tsp ground cumin

¼ tsp oregano

¼ tsp ground ginger

2 tbsp white vinegar

1 tbsp water

Directions

Mix the seasoning:

In a small bowl, combine paprika, salt, black pepper, ancho chili powder, New Mexico chili powder, onion powder, garlic powder, cinnamon, cumin, oregano, and ginger. Stir well to blend all the spices.

Prepare the pork:

Add the ground pork to a large bowl. Sprinkle the seasoning mix over the meat.

Add liquids:

Pour in the white vinegar and water. These will help the spices absorb and give the chorizo that signature tangy flavor.

Combine thoroughly:

Using your hands or a spoon, mix everything until the pork is evenly coated with the spices. Don’t overmix—just make sure it’s well combined.

Marinate (optional but recommended):

Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.

Cook or store:

To cook: Heat a skillet over medium heat, add the chorizo, and cook until browned and fully cooked through.
