CHAMPAGNE VINAIGRETTE

1/3 cup Shallot (fine diced)
1.5 tsp salt
1.5 tsp sugar
1/4 cup champagne vinegar
1/2 cup grape seed oil
Directions
Mix together the shallots, salt, and sugar. Allow the mixture to sit for 30 minutes to allow the shallots to release their juice, which will flavor the vinegar.
Add the champagne vinegar and allow it to sit for another 30 minutes so the flavors can marry.
Place the mixture into a blender and slowly stream in the grapeseed oil. Your dressing is ready for use.
