Chicken & Potatoes, Middle Eastern Style with a Twist

3 lbs chicken pieces (Bone in skin on works best)
2 lbs potatoes peeled and thin cut lengthwise
2-3 tsp kosher salt
1 tsp black pepper
1 tsp Aleppo pepper
1 tsp ground cumin
1 tsp dried oregano
1/4 cup lemon juice
1/2 cup red wine (I used Cabernet but Pinot is great and a little less intense)
4 -5 cloves crushed garlic
1 heaping Tbsp tomato paste
1 heaping Tbsp pepper paste
1 Tbsp olive oil to coat the bottom of the pan. Optional.
Note- If you have issues with undercooked potatoes, try par boiling them before adding to the baking dish.
DIRECTIONS-Preheat oven to 400 (convection setting)
Directions
Add olive oil to the bottom of the pan. Add all the ingredients to a baking dish. Combine well and arrange potatoes under the chicken. Cover and bake for 45 minutes. Uncover, and baste the chicken with the juices. Continue baking another 15-20 minutes. Serve with Lebanese rice (recipe is on my feed!) I hope this becomes a favorite in your home, too!
