Smoky Barbecue Sauce

Ingredients

2 litres ketchup

170g chipotle peppers in adobo sauce

125ml apple cider vinegar

175g black treacle

1 1/2 teaspoons onion powder

1 1/2 teaspoons garlic granules

1 1/2 teaspoons ground mustard

1 1/2 teaspoons smoked paprika

1 1/2 teaspoons ground coriander

1 tablespoon sea salt

1 1/2 teaspoons freshly cracked black pepper

220g dark brown soft sugar

250ml whisky

2 tablespoons hickory flavoured liquid smoke

Directions

1.Combine the ketchup, chipotle peppers in their sauce, apple cider vinegar, black treacle, onion powder, garlic granules, ground mustard, smoked paprika, coriander, salt, black pepper, dark brown soft sugar, whisky and liquid smoke in a large saucepan and bring to a gentle boil over medium heat, stirring frequently. Cook the sauce for 15 minutes, then reduce heat to low and simmer 15 more minutes, stirring often. Use immediately or refrigerate.
