Homemade Sourdough English Muffins

Ingredients

1 cup whole milk, warmed

2 tablespoons butter, melted

2 tablespoons brown sugar

1 teaspoon active dry yeast

½ cup sourdough discard or active sourdough

2 ½ cups bread flour or AP flour

2 teaspoons salt

Directions

Mix warm milk, melted butter, sourdough, sugar, and yeast in a large mixing bowl and let sit for a few minutes.

Add flour and salt and mix until combined.

Cover and let rise until doubled in size (60-90 minutes).

Dump onto floured surface and roll out to about a 1-inch thickness.

Cut rounds with a jar, cup, or mason jar ring.

Line baking pans with cornmeal and place them on pan. Cover and allow to rise about an hour.

Preheat skillet over medium low heat. Place muffins in and cook 3-5 minutes each side covered.
