Chicken Caesar Baked Wraps

Ingredients

I had so much love on my last baked wrap lunch prep I thought I’d do another version inspired by my favourite ever salad!! This has a creamy, lighter dressing and plenty of protein from the chicken & bacon as well as fibre from the chickpeas and mixed seeds! It’s super filling, packed with goodness and great as a salad, stuffed into a pitta or in a toasted wrap like I did!🥬🎉🩷

Ingredients (Serves 3–4)

For the chicken tray bake:

600g boneless, skinless chicken thighs, diced

1 tin chickpeas, drained and rinsed

4 smoked bacon medallions

1 tsp paprika

1 tsp garlic granules

2 tsp mixed herbs

Directions

Spray oil or 1 tbsp olive oil

For the salad⬇️

1 large head of lettuce, chopped

5 tbsp mixed seeds (e.g. sunflower, pumpkin, sesame)

Lighter Caesar dressing:

2 tbsp Greek yoghurt

3 tbsp light mayo mayonnaise

1 tsp Dijon mustard

½ tsp garlic granules

Pepper

Splash of water to loosen & feel free to add a bit of grated Parmesan!!
