Greek Yoghurt Almond Croissant Bread

Ingredients

3 heaped tbsp (60g) self raising or brown/ plain flour (+ 1/2 tsp baking powder)

2 tbsp (50g) Greek or soya yoghurt

1 heaped tbsp flaked almonds

1 tsp almond extract

Directions

Mix everything in a bowl to make a thick dough

Use your hands to squeeze and roll the dough into a soft and smooth ball, it should not sticky. Add more flour if needed

Roll the dough into a sausage then twist and curve it into a croissant shape

Prod extra almonds into the top of the dough

Air fry on 180C for 12 mins, turn over then bake for another 3-5 mins. Or oven bake on 180C for 25 mins

Dust generously with icing sugar

Gluten free - use gluten free self raising flour + 1/3 tsp xanthan gum
