Cheesy Fajita Chicken & Chorizo Rice

Ingredients (serves 2):
30g chorizo diced
200g diced chicken breast
1 red onion diced
1 small red pepper diced
1 small green pepper diced
1 and ½ tbsp fajita seasoning
Tbsp lime juice
1 chicken stock cube crumbled
100ml water
200g fajita cooking sauce
1 packet of microwave mexican flavoured rice
35g mozzarella grated
15g reduced fat cheddar grated
A few sprigs of fresh coriander chopped
Optional - 15g ranch sauce mixed with a tsp water (extra 30 cal per portion)
Directions
Start by pan frying the chorizo for 3-4 minutes until crispy. Remove from the pan and leave the oils in the pan.
Add the chicken to the pan and fry for 6-7 minutes until almost cooked through, before adding in the onion and peppers frying until they have softened and the chicken is cooked.
Once cooked through, add the fajita seasoning, along with the lime juice, chicken stock cube, water and the cooking sauce.
Give it all a good stir, and return to the hob for a few minutes to reduce slightly.
In the meantime, microwave the rice according to packet instructions.
Combine the rice with the sauce.
Top with the grated cheese and the cooked chorizo. Cover with a lid and add to medium heat for a few minutes until the cheese melts.
Once melted, drizzle the ranch sauce over the top of the rice before scattering over the fresh parsley.
