•2 large cucumbers (or 4-5 Persian cucumbers)

•1 tsp salt

•1–2 cloves garlic, minced

•2 tbsp rice vinegar

•1 tbsp soy sauce

•1 tsp sesame oil

•1 tsp sugar (adjust to taste)

•1–2 tsp chili flakes or chili oil (adjust to spice preference)

•1 tsp toasted sesame seeds

•1 green onion, sliced (optional)

•Fresh cilantro (optional garnish)

Directions

Instructions:

1.Prepare the cucumbers:

•Wash and slice cucumbers thinly (either into rounds or half-moons).

•Sprinkle with 1 tsp salt, toss, and let sit for 10–15 minutes to draw out excess water.

•Drain and gently squeeze out extra moisture with paper towels.

2.Make the dressing:

•In a bowl, mix garlic, rice vinegar, soy sauce, sesame oil, sugar, and chili flakes or chili oil.

3.Combine:

•Add the drained cucumbers to the dressing and toss to coat evenly.

4.Finish:

•Sprinkle with toasted sesame seeds and green onions.

•Chill for 10–30 minutes before serving for best flavor.

•For extra crunch, add thinly sliced red onions or carrots.

•Use a mandoline slicer for perfectly even cucumber slices.

•Persian or English cucumbers work best (less bitter and fewer seeds).
