Baked Apple Cheescake

1 cup (150g) chopped apple (I left skin on for nutrition)
1/3 cup (80g) low fat cottage cheese
1 Egg (60g)
1 tsp vanilla extract
Optional: Frosting
60g salted caramel yoghurt @yoproau
12g (serving) salted caramel powdered peanut butter @macr0mike my d/c: JADER10 or peanut butter
Caramel syrup
1 tsp peanut butter
I tbsp sugar free maple syrup @lakantoaustralia or preferred
Directions
Preheat the oven to 180°C.
In a small food processor, add the apple, cottage cheese, egg, and vanilla extract. Blend until smooth.
Pour the mixture into a greased and lined ramekin.
Bake for 35-40 minutes
Allow it to cool, then transfer it to the fridge to firm up and develop a denser, creamier texture.
Serve: Once set, drizzle with caramel syrup by mixing nut butter with maple syrup (included in macros) or use plain maple syrup if you prefer.
Optional Frosting: Mix the yoghurt with powdered peanut butter or regular peanut butter until smooth, then spread it over the set cake.
