Saucy Chicken And Broccoli

Ingredients:
Sauce:
– 1/2 cup chicken broth
– 1/4 cup hoisin sauce (gluten-free if needed)
– 1/4 cup reduced sodium soy sauce
– 2 tbsp honey or maple syrup
– 1/2 tsp black pepper
– 2 tbsp arrowroot, tapioca flour, or cornstarch
Stir Fry:
– 2 tbsp olive oil or avocado oil, divided
– 1 pound ground chicken (or beef or turkey)
– 4 cups broccoli florets, cut into small, bite-sized pieces
– 3 scallions, finely sliced (green and white parts)
– 1 cup unsalted cashews, roughly chopped
– 4 cloves garlic, mashed
– 2 tbsp fresh ginger, grated or diced
Directions
– Start by preparing the sauce. Whisk together all of the sauce ingredients until smooth and set aside.
– Add 1 tablespoon of the oil to a large skillet over medium heat and sauté the ground chicken until cooked through.
– Remove chicken from the pan and add remaining tablespoon of oil to the pan, followed by the broccoli and scallions.
– Mix for about 2–3 minutes, then add the cashews, garlic, and ginger, stirring for another 2 minutes.
– Add the cooked chicken back to the pan and pour sauce on top.
– Coat everything well with the sauce, and stir for another few minutes until the sauce thickens and broccoli reaches desired doneness.
– Remove from heat and serve alone or over rice.
