Chicken Parmesan Subs

1/2 cup Bread Crumbs
3 tbsps Whole Milk
1 lb Extra Lean Ground Chicken
1 Egg (large)
1/4 cup Parmigiano Reggiano (grated, plus more for garnish)
2 tsps Italian Seasoning
3 cups Marinara Sauce
4 ozs Mozzarella Cheese
12 ozs Whole Wheat Hot Dog Bun (toasted)
2 tbsps Parsley (finely chopped)
Directions
Preheat the oven to 400°F (205°C).
In a bowl, combine the bread crumbs and milk. Let soak for five minutes. Mix in the ground chicken, egg, parmesan cheese, and seasoning.
Roll the mixture into 1 1/2-inch (4 cm) meatballs. Place the meatballs in a baking dish and pour the marinara sauce over them. Bake for 30 to 35 minutes, or until the meatballs are cooked through
Turn on the oven broiler. Top the meatballs with mozzarella and broil for two to four minutes until the cheese melts and browns slightly.
Divide the meatballs and sauce evenly among the toasted buns. Garnish with parsley and extra parmesan. Serve warm and enjoy!
Notes
Leftovers: Best enjoyed fresh. Refrigerate the meatballs and sauce in an airtight container for up to three days. Freeze for up to three months.
