Oven-Roasted Celery Stalks

1 large bunch celery
1 ½ Tbsp olive oil
1 tsp white wine vinegar
1/2 tsp dried parsley
1/2 tsp dried thyme
1/2 tsp dried basil
1/4 tsp garlic powder
Salt + pepper, to taste
Optional: 2 Tbsp crumbled blue cheese (to garnish)
Directions
Preheat oven to 400F.
Wash and dry celery stalks. Remove any damaged ends and any leaves. Then, cut stalks into thirds or roughly 2.5-inch long pieces.
Place cut celery into a large baking dish. Add olive oil, white white vinegar, all the dried herbs, garlic powder, salt, and pepper. Toss to coat.
Place baking dish in the oven for 30-35 minutes, tossing halfway, until celery is lightly browned and fork tender, yet still with a slight crunch (as desired).
Remove and serve celery as is. Or, you may add some crumbled blue cheese if preferred. Enjoy hot!
