Creamy One Pan Chicken and Spinach Skillet

4 boneless, skinless chicken thighs (or breasts)
1 tbsp olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
3 cups fresh spinach
1 cup low-sodium chicken broth
½ cup plain Greek yogurt or light cream cheese
¼ cup grated parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Optional: squeeze of lemon
Directions
Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning, then sear for 5–6 minutes per side until golden brown. Remove chicken briefly and set aside. In the same pan, add garlic and tomatoes and cook for 2–3 minutes until softened. Pour in chicken broth and stir, scraping up the browned bits for flavor. Reduce heat and stir in Greek yogurt and parmesan until creamy. Add spinach and cook until wilted, then return the chicken to the pan and simmer for another 5–7 minutes until the chicken is cooked through and the sauce thickens slightly. Finish with a squeeze of lemon if desired.
