Directions

→ 1 cup uncooked spelt weighs 6½ ounces (180 g).

→ Use 2 parts liquid to 1 part uncooked spelt as a rule of thumb for the absorption method.

→ Cook spelt between 40 and 90 minutes.

→ 1 cup (180 g) uncooked spelt yields 2 cups (370 g) cooked.

→ 1 cup spelt flour weighs 4¼ ounces (120 g).

Notes

Whole spelt kernels are delicious and versatile, behaving like farro-tasty, chewy, mild-flavored - in soups, stews, and side dishes. But I think spelt shines brightest as a flour. The flavor is rich and nutty and the baking qualities make it a good substitute in any recipe calling for whole wheat flour.
