Fajita Pasta

Ingredients

One pot dish of pure heaven. This would be the most popular recipe I’ve made so many of you have made it which warms my heart🥹. If you eat vegetarian style like me make it with Vetta pasta for protein & add tinned lentils!

1 Tbsp olive oil

2 chicken breasts, diced

200g dry pasta

1 red + 1 green capsicum, sliced

1 red onion, sliced

1 packet fajita seasoning

1 tub philadelphia light cooking cream cheese

Directions

Cook the pasta first.

Heat the oil & cook the chicken with 1/3 pack of fajita seasoning for 5 minutes or until no pink is showing on the chicken. Push to the side.

Add all the veggies & 1/3 pack of fajita seasoning. You may need to add more oil. Cook for 4 mins or until softened. Mix it all together. Make a hole in the centre.

Add in the whole tub of cream cheese, pasta & the remaining fajita seasoning. Cook until heated through. (And cut a piece of chicken in half to ensure it’s cooked)
