Ingredients

For the Chicken:

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper, to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon fresh dill, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Salad:

4 cups mixed greens or baby spinach

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup crumbled feta cheese

Lemon wedges (for serving)

Directions

Cook the Chicken:

Preheat a grill or skillet over medium heat.

Rub the chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.

Grill or cook the chicken for 6-7 minutes per side, until fully cooked and golden brown. Let the chicken rest before slicing it into strips.

Prepare the Tzatziki Sauce:

In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, salt, and black pepper. Mix well and refrigerate until ready to use.

Assemble the Salad:

In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.

Top with the sliced chicken.

Serve:

Drizzle the salad with the tzatziki sauce or serve it on the side. Add lemon wedges for extra zest.
