Cheesy Rotel Pasta Skillet

Ingredients

1 lb ground beef

1 lb turkey sausage (or your favorite sausage)

12 oz penne pasta, cooked and drained

½ yellow onion, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

2 cans (10 oz each) Rotel tomatoes, undrained

16 oz Velveeta cheese, cubed

½ cup milk

1 tsp onion powder

1 tsp garlic powder

Directions

Cook the Pasta:

Boil the penne in salted water according to package instructions. Drain and set aside.

Brown the Meat & Veggies:

In a large skillet over medium-high heat, add ground beef, turkey sausage, diced onion, and bell peppers. Cook until the meat is browned and vegetables are softened. Drain off any excess grease.

Season:

Sprinkle in onion powder and garlic powder, stirring to combine.

Add Rotel & Cheese:

Pour in the undrained Rotel tomatoes and milk. Add the Velveeta cubes. Stir well, then cover the skillet and let cook for several minutes, stirring occasionally, until the cheese is completely melted and the sauce is smooth.

Combine with Pasta:

Add the cooked pasta to the skillet. Toss well so everything is evenly coated in the creamy sauce.

Serve:

Spoon into bowls and enjoy while hot!
