2 ½ lb bone-in, skin-on chicken pieces (breasts halved, + s+p)
¾ c marmalade (orange, kumquat, apricot, or peach)
1½ Tbsp whole grain mustard
2 Tbsp shoyu/tamari/coconut aminos
2 Tbsp melted butter (or plant-based)
2 Tbsp fresh rosemary or thyme, chopped
½ tsp blk pepper
Directions
Whisk marmalade, mustard, shoyu, butter, herbs + pepper.
Toss chicken in marinade → chill 6–8 hrs (or overnight).
Bake @ 400°F, 35-45 min until cooked through + golden. Rest 10 min.
Serve warm + watch it disappear!
