Lemon Chicken With Orzos

1 lb chicken Italian sausage
1 T oil
I medium onion, diced
2 cloves minced garlic
2 t Italian seasoning
1 t salt, 1/2 t pepper
2 T butter
1 cup orzo
2 cups chicken broth
Juice of 1 lemon
Splash (or up to 1/2 c) of heavy cream
1/4 cup Parmesan
2 handfuls roughly chopped spinach
Directions
In Dutch oven or large saucepan, brown Italian sausage. Remove from pan.
Add 1 T oil (if chicken sausage - if it was pork, you can use the drippings) to pan, and add diced onion. Cook over medium heat for 3-4 minutes.
Add garlic and Italian seasonings, and cook for 30 seconds or until garlic is fragrant.
Add butter to pan and melt, then add orzo. Stir to coat thoroughly and cook for about 2 minutes to toast orzo.
Pour in chicken broth and lemon juice, and salt and pepper. Bring to boil and reduce heat to medium-low, stirring often. Add a splash or two of broth if needed.
Once orzo is cooked (about 10 minutes) stir in the Parmesan and cream. Once mixed thoroughly, fold in the sausage and spinach. Enjoy!
