When I First Became a Mom I Assumed Homemade Mac and Cheese

Turns out, while the pasta is boiling, you can make a creamy cheese sauce from scratch before the noodles are even done.
No mystery ingredients. No powdered cheese packet. Just real, simple ingredients that taste SO much better.
Here's how I make it for our family:
Homemade Mac & Cheese (Serves 4)
Boil ½ of a 16oz. box elbow macaroni for about 10 minutes.
While the pasta cooks, melt 2 tbsp butter with ½ tsp salt.
Stir in 1 tbsp flour and cook for about a minute to make a roux.
Whisk in ½ cup milk until smooth.
Stir in 1 cup freshly grated cheese (I used Gouda), 1 egg yolk, a dash of garlic powder, and a dash of paprika. (Optional, add 1 tsp mustard).
Directions
Add the drained noodles and stir until everything is creamy and coated.
That's it!
