Sausage Balls

2 lb Breakfast sausage
~1 cup Bisquick mix
8 oz Sharp cheddar cheese
Directions
Preheat the oven to 350°F.
In a large bowl, combine the sausage and sharp cheddar cheese, then mix in Bisquick mix.
Mix until everything is well incorporated.
The mixture should not be too dry and not overly greasy.
Adjust by adding Bisquick a little at a time if needed.
Roll the mixture into bite-sized balls (~2 inch balls) and place them on a baking sheet.
Bake for 20–30 minutes.
Start checking around 25 minutes. The outside should be lightly browned.
To test doneness, open one:
If it’s pink inside, it needs more time.
If fully cooked through, it’s ready.
Notes
This is a “play it by ear” recipe—texture matters more than exact measurements.
You don’t want them bread-like, but you also don’t want greasy sausage balls.
Optional but encouraged: call Mom before you start for quality control 😉
