1/2 Batch Doris Lehody's Xmas Cake

1/2 lb butter
1 1/4 c sugar
6 eggs
2 c flour
250 g candied cherries
500 g raisins
125 g almonds
2 pineapple rings
Juice & rind of 1/2 lemon
Juice & rind of 1/2 orange
1/2 apricot nectar
1/2 tsp of almond
1/2 tsp of vanilla
Directions
Soak fruit & raisins overnight in juices.
Cream butter & sugar with mixer. Add 3 eggs, 3 yolks. Beat 10 minutes.
Add 3/4 c flour to fruit.
Add flour, fruit, juices & flavoring. Mix.
Fold in 3 beaten egg whites.
Bake 250 for 4 hours (large tin) or small 2 hours. Grease pans & line with well greased paper.
