Kickass Sweet Potato Quiche

Ingredients

THE CRUST

1 medium sweet potato

THE VEGETABLE FILLING

1 cup onion, diced

1 cup mushrooms, diced

1 handful spinach

1/2 cup cherry tomatoes, sliced

2 cloves garlic, minced

1/4 tsp paprika

pinch of salt and pepper

THE EGG MIXTURE

5 eggs

3/4 cup 2% cottage cheese

1/2 cup parmesan, shredded

salt and pepper to taste

Directions

Preheat oven to 350°F. Add a little olive oil to a pie pan. Slice the sweet potato into very thin rounds and overlap to fully cover the pan, pressing slices up the sides.

Bake the crust for 10-15 minutes until partially cooked and flexible. Readjust slices up the sides if needed.

Sauté onions, garlic, paprika, salt, and pepper in olive oil until softened. Add mushrooms and cherry tomatoes and cook a few minutes, then stir in spinach until wilted.

Whisk or blend eggs, cottage cheese, parmesan, salt, and pepper until smooth.

Mix sautéed vegetables into the egg mixture and pour over the pre-baked sweet potato crust. Spread evenly.

Bake for 30 minutes or until the center is set.

Cool for 10 minutes before slicing and serving.
