For the Stir Fry
1 pound ground sausage
1 purple onion, diced
1 large zucchini, diced
1 red bell pepper, diced
Garlic powder, to taste
Onion powder, to taste
Olive oil, as needed
For the Sauce
1/2 cup orange juice
1/4 cup soy sauce
2 teaspoons sesame oil
2 tablespoons brown sugar
1 teaspoon ground ginger
1 heaping tablespoon cornstarch
Optional: red pepper flakes and/or sriracha, to taste (for the spice)
Directions
Heat a large skillet over medium-high heat and drizzle with olive oil. Add the ground pork sausage and cook until browned and fully cooked through, breaking it up as it cooks. Remove from the skillet and set aside.
Add a little more oil to the skillet if needed. Add the diced onion, zucchini, and red bell pepper. Season with garlic powder and onion powder and sauté for 5–7 minutes, or until the vegetables reach your desired tenderness.
In a small bowl or measuring cup, whisk together the orange juice, soy sauce, sesame oil, brown sugar, ginger, cornstarch, and optional red pepper flakes or sriracha until smooth.
Return the cooked sausage to the skillet and pour in the sauce. Stir everything together until well combined.
Bring the mixture to a gentle boil and cook for a few minutes, stirring often, until the sauce thickens and coats the pork and vegetables.
Taste and season with salt and black pepper if needed. Serve over steamed rice or noodles and enjoy!
