5-Ingredient Chicken Tortilla Soup

1 rotisserie chicken, shredded (3 to 4 cups)
4 cups chicken stock
1 (14.5-ounce) can diced fire-roasted tomatoes
1 (19-ounce) can red enchilada sauce
1 (15.25-ounce) can whole sweet corn, drained
Sea salt, to taste
Freshly cracked black pepper, to taste
Fresh lime juice
Sour cream
Shredded cheese (we like cheddar)
Diced avocado
Corn chips, crushed
Directions
Combine ingredients and boil
In a large soup pot, combine the shredded chicken, chicken stock, the tomatoes and their juices, the enchilada sauce, and the corn. Place the pot over high heat and bring the soup to a boil, then reduce the heat to medium-low and cook, stirring occasionally, until the tomatoes are tender, about 15 minutes.
Season the soup.
If desired, season to taste with salt and pepper.
Garnish and serve
Serve the soup in bowls topped with lime juice, sour cream, shredded cheese, avocado, and chips if desired.
