JERED'S BACON JAM BURGERS

Ingredients

1 large onion

2-3 tablespoons butter or olive oil

1 pound bacon

For the burger:

1 tablespoon creamy peanut butter

1 teaspoon Worcestershire sauce

1 tablespoon Dijon mustard

1 egg

¼ cup panko breadcrumbs

1 clove garlic

1 pound ground beef

1 teaspoon salt

Pinch of cracked pepper

Toppings:

1 package sliced sharp white cheddar cheese

1 bag brioche buns

Jam of your choice (using fig adds flair)

Mayonnaise

Handful of arugula

Directions

Slice the onion and sauté in butter or olive oil until browned and caramelized.

Cook the bacon and set aside. Combine all burger ingredients and fold them into the ground beef. Form the burger mix into patties, then season them with salt and pepper.

Smoke (or grill) the meat at 375°F until the internal temperature is at least 135° for medium. Lightly toast the buns, add spreads and construct the burgers. Top them with cheese, onions, bacon and arugula.
