Gluten Free Vegan Gingerbread Cookies

Ingredients

2 3/4 cup all purpose GF flour (Bob's red mill)

1 1/2 cup icing sugar

1 tsp salt

1 tbs cinnamon

1 tsp ground ginger

1 tsp nutmeg

1/2 tsp cloves

1/2 cup vegan butter (Room temp)

1/4 cup molasses

1/4 cup unsweetened coconut milk (carton not can)

Directions

In a large bowl, combine dry ingredients

Add in butter in chunks and mix until you have a dry crumbly dough

Add in molasses and coconut milk and beat until dough comes together (will be sticky)

Form a ball and wrap it tightly then place it in the fridge for 1 hour

Line 2 sheets with parchment and preheat oven to 350 f

Dust work surface with icing sugar and roll out dough (1/8 inch thick)

Cut desired shapes

Bake 10-12 minutes

Let cool 10-15 minutes then transfer on rack
