Pistachio Protein Gelato

Ingredients

1 1/2 cups Greek yogurt (plain or vanilla)

3/4 cup pistachios, roasted and unsalted (save some crushed for topping)

1–2 tbsp honey

Juice from 1/2 lime

Directions

Add Greek yogurt, pistachios, honey, and lime juice to a blender. Blend until smooth and creamy.

Pour into a freezer-safe container. Cover and freeze overnight.

Let thaw for 5–10 minutes before serving so it scoops easily.

Top with extra crushed pistachios and enjoy.
