Holiday Pomegranate Salad

Ingredients

15 oz canned crushed pineapple

12 oz - 16 oz chopped cranberries, chopped in the blender

1 1/2 cups (300 g) sugar

4 cups quartered grapes

Seeds of 2 pomegranates

1 1/4 cup heavy whipping cream

115 g cream cheese, cool

75 g powdered sugar

1/2 teaspoon vanilla bean paste or 1 teaspoon vanilla

Directions

Day 1: combine crushed pineapple with juice, chopped cranberries, and sugar. Cover and refrigerate.

Day 2: drain mixture in a colander for 1-2 hours. Add the grapes and pomegranates.

Mix the cool cream cheese until smooth with mixer using whisk. Add the heavy whipping cream and mix until soft peaks form. Add the vanilla and powdered sugar and whip until thick.

Fold the whipping cream mixture into the fruit mixture. Enjoy!

Notes

11/2025 I used 12 oz cranberries and about 12 oz pineapple making the rest the same. Great!
