Lemon-Butter Grilled Shrimp Pasta

Ingredients

1 pound Shrimp

1 Bell Pepper

1 Red Onion

1 box Linguini

Lemon Juice

Butter

Red Pepper Flakes

Minced Garlic

Sprinkle of Sugar

Directions

Preheat your grill on medium high heat. Bring a pot of salted water to a boil on the stove.

Chop onions and peppers into 1 - 1 1/2 inch sized pieces. Skewer shrimp and veggies separately.

Coat the skewered ingredients in oil and season with salt and pepper. Sprinkle one side of the skewers lightly with sugar. This will help create a nice char on the grilled skewers.

Once the water is boiling, cook the linguine according to the box directions.

Reduce the heat on the grill to medium. Place the skewers sugar side down on the grill.

While the skewers are cooking, place a metal grill safe pan on the grill. Place the butter garlic and red pepper flakes in the pan. Cook on the grill until butter is melted and garlic is fragrant.

When the veggie and shrimp skewers are done. Remove the shrimp and veggies from the skewer into the grill safe pan with the sauce. Add in lemon juice to taste. Cook until the sauce comes together.

Serve over pasta.

Notes

Optional: Add mushrooms to your veggie skewers.
