1 can Busch’s Baked Beans
1 can Mild Rotel (change heat of Rotel as desired)
1/2 White Onion
1 Orange Bell Pepper
Olive Oil
1 Tablespoon Salt
1 Tablespoon Black Pepper
Directions
Preheat oven or smoker to 350 degrees.
Dice or slice onion and bell peppers. (For picky crowd, cut into large pieces so they can pull out onions and peppers).
*Optional* rinse onion in a colander with cold water to neutralize pungent onion taste and prevent onion breath.
In an oven safe pan (cast iron preferred) heat oil on medium heat.
Once oil is heated, add onion and pepper. Combine with a pinch of salt and pepper. Cook vegetables until fragrant
Turn off the heat and add can of beans and Rotel into the pan. Stir so that vegetables are evenly mixed.
Place full pan onto smoker or into oven at 350 degrees. Cook beans are hot and liquid has thickened. I usually leave an hour for this in the smoker to take on the smokey taste.
Notes
Recipe heat directly corresponds to the heat of Rotel. Mild is preferred spice for most.
Rinsing onions is optional.
Best cooked in a smoker. If not, use oven.
Use yellow onion for sweeter flavor.
Orange bell pepper is optional. I like it for the color contrast to the red tomatoes and jalapeños in the Rotel.
