Crack Cabbage Casserole

1 small head green cabbage
1 (1-oz) package ranch dressing mix
½ cup cooked chopped bacon
1 medium onion (chopped)
½ cup butter
salt and pepper (to taste)
1 (10.5-oz) can Unsalted Cream of Chicken Soup
⅓ cup mayonnaise
3 Tbsp melted butter
1 cup shredded sharp cheddar cheese
1 sleeve Ritz crackers (crushed)
Directions
Preheat oven to 350ºF. Spray a 9-inch square baking dish with cooking spray.
Chop cabbage and onion with a sharp knife. Melt butter in a large skillet over medium-high heat. Add cabbage and onion and cook until tender. Remove from the heat and set aside.
In a medium bowl, stir together cream of chicken soup, mayonnaise, and ranch seasoning. Add cooked cabbage, onion, and bacon. Stir to combine. Spread the cabbage mixture into a casserole dish.
In a small bowl, combine melted butter, crushed Ritz Crackers, and shredded cheddar cheese. Spread the cracker mixture over the top of the casserole.
Bake for 30 minutes or until topping is browned.
